What Each Ingredient Is Doing

Ingredients

  • 1.5 cups Black beluga lentils rinsed
  • 4 medium Beets peeled, cut into wedges
  • 0.5 cup Walnuts roughly chopped
  • 4 cups Baby spinach
  • 0.25 cup Tahini
  • 1 whole Lemon juiced
  • 1.5 tsp Smoked paprika
  • 1 tsp Ground cumin
  • 3 cloves Garlic minced
  • 3 tbsp Extra virgin olive oil divided
  • 1 tsp Sea salt to taste

Instructions

    Heat oven to 425°F (220°C). Toss beet wedges with 1 tbsp olive oil, smoked paprika, and a pinch of salt. Roast 30-35 minutes until tender and caramelized at the edges.

    While beets roast, add lentils to a pot with 3.5 cups water. Bring to a boil, then simmer 20-25 minutes until tender but not mushy. Drain any excess water.

    Toast the walnuts in a dry pan over medium heat for 3-4 minutes until fragrant.
